Hi chef. I have a question if you don't mind. Can transglutaminase glue a piece of pork skin to a layer of fat? For example, if I wanted to reduce the fat underneath the skin of a pork belly, I would cut off the skin, then cut off a portion of the fat layer. Then I'd glue the skin back to the remaining fat layer. Is this possible?
