3 things that need to be improve in ng3:the camera(just let the player control it with the right stick instead of the fixed disaster),the 1st person view for arrows(it NEEDS to be removed,its annoying,slow & in ng2 it was a pain to use it for the final boss,which required it,it needs to be replace with a 3rd person locked on,it will be obviously better)& the combat/movements of ryu needs to be faster(thats was something that annoyed me in the previous ng,it has a delay to movements & atttacks)

you can simply use the triangle charging attack to knock them off their horses one slice at a time. you have to get a little lucky and hope the camera doesn't fuck you up too bad in this fight, the camera is really your worst enemy here, although thats true for most of the game
