Excuse my ignorance I'm English but the Grits? What are they? It looks like you're adding Cous Cous but it comes out looking like mashed potato. What are grits exactly?
Good stuff. I'm wondering if the presentation could be jazzed up by not combining the sausage and shrimp with the sauce, thereby plating up the grits, sauce, and adding a few pieces of shrimp and sausage as garnish in order to create more color contrast in the presentation.

You can take the grits and pout them into a pan, then refrigerate... then the next day... cut them up and pan fry the cold pieces to make it more like your New Orleans dish.

Interesting variation..I am from the south and this is like our crack down here....Usually here they use heavy whipping cream instead of milk for the grits...sometimes the shrimp are cooked in cayenne as well..also here the sauce is normally a slight orange color and has a bit of a kick to it ( no bell peppers)..I have also seen this dish done by added cheese to the grits and jalapeno peppers to the shrimp......
not the healthiest thing in the world but it sure looks great.
