actually, you don't need the rings.. the vinegar in the water will bind the egg white to the yolk.... then when you pick it up GENTLY you put it in a cold water for about 5secs this will make the poached egg easy to handle.... i hope this helped you guys :)
@chiooh2 that's exactly right. additionally i like to create a bit of a vortex in the water right before dropping the egg in. also i don't bother with the ramekins - just drop the egg right into the water. of course, i'm the one cleaning up after myself - if you have someone to tidy up after you then by all means....

Normally you use a small cup first so that you can pour the egg gently into the simmering water to keep it all together (harder to do straight from shell), but that's when youre not using the metal rings.
