  • Where did you get a taste for kimchee? I love the stuff but I've never made it. If you ever get to making more, please consider making a video. Good stuff!

  • @idsman75 "Where did you get a taste for kimchee?..."  You gotta live before you die! Around here, you can't get the real stuff. The Thai have something similar that is good too. In Hawaii I had some good variations including seaweed.

  • @idsman75 -Well, I guess I can say, an old company I used to work for. I used to do their R&D stuff & maintain the factory's PC network as net admin. Occasionally, we'd have to test-out punches on the Amada 357 to see if they could punch 10ga 304. Then after, we'd have to see if the 230 ton break press could bend 1/4" round on 1/8" & if XXXXX (name redacted to protect the innocent) could still TIG weld. Of course it wasn't long after I left (~2yrs and 1 product launch) they bellied up.

    Another great video.

    Have you ever injected the ham to have a more even smoke flavor throughout the ham?

    Also if you have any plans for that smoker I would love to see them.

    I saw the video but I am a blueprint/drawing kind of guy.

    I would need all the measurements before I attempt anything like that.

  • Pit: sorry, no plans - just a concept.

    Ham: the whole "cajun injector" (IMHO) concept for meat is nothing more than a mass produced veterinary sized hypodermic w/big bore needle which bears a striking resemblance to the stainless steel brining injectors used in curing hams.

    Of course you can't afford to give a ham injector away w/pint jars salty/spiced water.

  • Dear ridel149, we really enjoy your videos and great sense of humor and such a expansive knowledge of everything... truly a mans man. Question about the ham.... was it pre brined in the package or not? Do you ever use a mop sauce for your hams to get a sweet crusty bark on the ham? Can you use any type of peanuts or do they have to be green peanuts? A guy back home in Ft. Bragg told me they could only be green. Just curious.

    I worked for the company that (among other things) engaged in commercial cooking equipment fabrication. I'd like to think I work well with folks; a few folks on the floor made me a pair (2 different diameters). Life is all about give and take. Management tends to forget, America's working men and women are the finest in all of the world. Sometimes all you have to offer is an attentive ear and a little mutual respect.

  • Its surprising to hear people say they have never heard of boiled peanuts, you can get them at ever gas station here in alabama. But I guess its just a southern thing, you don't see any bagel shops on our corners etc.

  • Exactly..... a regional thing. By chance do you know what scrapple is? Perhaps some of the PA deer hunting visitors might add a word in here. I used to love traveling and meeting folks.

  • i just looked up scrapple on wiki... another thing i have never heard of but looks like Pennsylvania dutch version of meatloaf. i've only seen one bagel shop around here.i cant think of any food that is really only know of in California or the western US.

    ... Abalone i guess, maybe. we add salmon to chowder. avocado pie. and a cobb salad. i dont know

  • I know what scrapple is but only because my uncle lives in Fawn Grove, PA. and he makes it with scraps of deer thats left over and can't really be used for anything else. Its basically just like my ancestors (cherokee!) did with buffalo, use every single part as not to waste what the earth has given you. Its not for me, I find it pretty nasty, reminds me of SPAM and who likes spam?! Most people make it out of pork though, dutch style.

  • Oh, and the scraps and fat and such are mixed with cornmeal and fried basically, there are variations of course. Forgot to explain exactly what it was....haha

    I have never heard of deer scrapple - that is a got to try.

    I really liked PA. Ever been to Danville? There are several state forests just north of there. Danville and surrounding area, absolutely beautiful.

  • Ive only been to Fawn Grove were my uncle lives once and to a few surrounding counties just riding with him seeing the town etc. Where he is I think he is the only non amish there....lol. We also went to hershey park and around that area, I like it there but until I retire I couldn't live that far away from everything because I hate to drive!

  • I made your strada this mornin for breakfast, I used 1lb of ground deer and 1lb of ground sausage in mine though, really good! Thanks for the idea!

  • Glad you liked it, it is easy to adjust one way or another. There are tons of variations on stradas and have another one Grandma gave me the week I posted the previous one. Need to do it sometime too. I go for easy - kitchen friendly cooking.
