  • Rainey53 google out chlorella and spirulina, a spoonful contains more protein than a good steak. Of course if you must eat meat then free range organic grass fed is bet. Duck is very good and relatively easy to prepare. An excellent reference is chlorellafactor

  • The American black duck (Anas rubripes) is much tastier than the White Pekin (Anas platyrhynchos domestica). Gamey, yes, but well worth the 20 gauge birdshot (12 gauge is major overkill for duck hunting!) required to kill it.

  • I've alwyas loved Monty python but only got really into it last Halloween. And since then I've been noticing SOOO many more Python references then I'd expected. I mean... smallll ones yes. Only someone who knows Holy Grail would understand this reference... But I love it when I see it.

  • Just tried this tonight, and ho-lee crap, was it good! I threw a couple of pounds of fingerling potatoes in the pot after steaming and let the water boil away while the duck was in the oven. The potatoes then fried in the floating fat and were sooo good. Didn't have any sturdy greens, so I saute'd halved grape tomatoes in the pan with some garlic. Also aweosme :)

  • Okay, though I'm vegetarian, my reasons behind abstaining from meat are more to do with health and less to do with animal rights but something seriously disturbs me about this dude talking about cooking and eating the animal while holding it and stroking it. Something about conceptualizing the animal as food while its still running around the yard creeps me out.

  • No offense, but there are no health benefits for being a vegetarian. One if you are not eating organic then well there you go both ways. And as a person people can develope degenerative diseases from being vegetarian long term.

  • Sure if you don't pay attention to the quality and variety of the food you eat, you can develop health problems, whether meat eating or not. I for one have a family history of heart disease and high blood pressure and it is easier to monitor my fat, cholesterol and sodium intake by removing meat from my diet.

  • Honestly, you raise an interesting point that betrays how far our culture has been removed from our food sources. Most Americans are so removed from our food, we can't even recognize real food from the processed crap that is sold in mega-marts.

    Although I have never slaughtered my own poultry, I do fish, and each time I take a fish from lake to plate, it reaffirms in me the precious nature of food. Denying the source and sacrifice is more barbaric than recognizing & valuing the animal.

  • @BaileyThePirate Did you know that there is a very hilarious and often quoted passage in the diary of one of the first Pilgrims in early American colonization where the author eloquently describes simultaneously the dire situation for many of the early settlers and the remarkable stupidity and shortsightedness in their planning.

    It describes how the unfortunate settlers were so hard up on food that they "were forced to catch and eat a lobster"

  • @BaileyThePirate Very well said. I am extremely supportive of hunting and fishing as long as nothing goes to waste. When I have a child, he or she will know exactly how precious the source of their food was. Our culture should be trying to move back toward teaching our youth to cherish our food and we should be doing our best to discourage the wasteful attitude we've grown into.

  • @BaileyThePirate I think that's why when I was job hunting, I took a spot as a lead chef (of a brigade of me and a sous chef) at a small restaurant. It allows me to work with the local food supplies, to supply only the freshest ingrediants. And I want to Thank Alton Brown for his American Classics, because my menu is the food that is classic american without this fancy twist. Good Home Cooking that's healthy because the ingrediants are fresh.

  • @rainey53 meat is pretty much neccassary for us since its in our food group. We get protien plus some importnat fats. If ur a veg thats cool too just hope u eat a lot of dark greeens cheese tofu and stuff causde thats another good way of getting protien plus nuts for that importsnt fat.

  • Sweeeet, I just called this farm & spoke to Doug, and he told me about a place on Route 25 named Bayview Market that sell his ducks 7 days a week. I am gonna get one next time I am hunting near Moriches

  • In Asia, duck is a very common cuisine and I can tell you, compared to chicken, duck is definitely, GOOD EATS.

    Especially if you think chicken is not flavourful enough, duck is like a cross between beef and chicken.

  • I've played around with this recipe, and I prefer to skip the steam and just fry the pieces on the stove top in a pan to render out the fat. Then I roast it on a wire rack in the oven, using AB's temperatures and times.

    I get a huge jar full of fat that's great for cooking with, and nice crispy duck to eat for dinner. Yum

  • I Agree, the steaming is not strictly neccessary, although preserving all that fat for later use can indeed be a good thing.

  • I find it kind of funny how he says he loves duck as a meal, but petting it as if it were his pet.

  • Breeding stock does get treated with more attention and affection than the ones being raised for meat (and he did say it was one of his layers). Mainly because they're around longer you get attached to them. I have no idea eating the chickens I raise for meat but I couldn't eat one of my laying hens (aside from the fact they would be tough and stringy).

  • In poultry speak, because ducks are aquatic birds and can also fly, they have a stronger flow of blood and more muscle, therefore every ounce of a duck is dark meat. Dark meat on poultry cooks like red meat.

  • Did this recipe last week...good lord. One of the best meals that I've made...and ate, in my life. The duck is tender and juicy, the skin (especially on the breast) is the stuff of dreams. I am now proud to say that I have an ice tray's worth of frozen duck fat and carnal thoughts in my head. Mmmm...

  • By the way, you may be interested to know that alton, in his early days, was a cameraman on Spike Lee's first film back in '89.

  • This recipe is delicious.  The skin is the best part. I tend to cook potatoes in the leftover duck fat rather than chard, though.
