What happens to the garlic after you drain the potatoes? I mean do you use that much garlic to actually make the mashed potatoes or is it just to cook the potatoes so that it adds flavour while boiling?
I was really digging the recipe until the ricer came up. I prefer some larger chunks and texture in my potatoes, the end result looked more "whipped" than "mashed." If you're just gonna rice them, why not cut them into even smaller pieces so they'll boil faster?
So that they all cook evenly. You don't want to have some of your potatoes hard while the other half are mushy and gummy and over cooked. This way they all start at the same point.
Tiger woods anyone?

I like potatoes a little thicker, you know the kind that sticks to your ribs. Yours look kind of like just a hair thicker than apple sauce.

@FierceDeityXeroX Smaller cuts of potato increase the chances for uneven cooking. Although I don't agree with the ricer either.
