When you do that, you should pull back on the analog sick or hold back the wii wheel to orientate the direction.

dude! once I found that on accident. I always use my mii(medium) and once I got bumped by bowser and I nearly got bumped off and did that, landed NEARLY perfect and got a series of mushrooms and did every shortcut possible(I got third(I kept trying to re-do that trick))

PS. I found a way to trick in a straight line, instead of going off to the side. It does save time. I'm trying to record it but I can't do it consistently... It's kind of a hit and miss thing...
