Just cooked up one of these for the first time. Pretty tasty! Good, meaty texture. Nice find! I think I normally would've avoided these guys in the wild due to their "DANGER DANGER" coloring, but if I ever see one, I'm totally snatching it up.
The arguement over whether to cut at stem or pull out of the groun doesn't matter with the lobster mushroom, its just a parasite to lactarius species.
This was our first year that we picked and ate Lobster mushrooms. We found about 40 pounds! We frooze them and we have used them in so may dishes. They go great in fettucini alfredo, tastes almost like shrimp with it!
that can actually damage the mycilium. the bit of left stem will rot and could spread. best to twist carefully, until it loosens and remove the entire mushroom.
Looks like that one took over Lactarius. might be a little spicy. Those are delish.

Next time, cut them off above the stalk so they will grow back in following years

what about all the mushrooms that go unpicked? Wouldn't they rot and then spread that rot to the mycilium as well?
