How do you cook one of those ? how do you prepare 'em for consumption ? do you steam it ? barbecue it or fried it ? i havent the slightest idea how to cook one of these...
@SithSereyPheap1 First clean clam which means getting the brown outer neck skin off, then pound neck meat until very thin. get a egg and egg-wash the meat and cover with panko/breadcrumbs. At this point your ready to cook heat skillet with evvo until hot and then pan-fry the clams about 20seconds on each side and your done. A little lemon juice and some chives and your fav. bottle of white wine
Bill, how in the world do you get the outer skin off of the neck? A couple weeks ago we got a bunch of Gapers at Charleston on a -2 foot tide. We worked for hours scraping, peeling, etc trying to find a good way to clean the outside of the neck. Though our technique definitely needs improvement, they were delicious! I would love to see a video how to clean a Gaper.
@Chrissers2010 Once you are home place the clams in a bucket and cover with slightly warm tap water and set the bucket in the sun for 4 hours. The clams will stretch out their necks while dieing. Do gapers dig down while you are trying to grab them.. the way razor clams do?
