The heat is what allows him to cook the omelette in this manner. He's using a high setting on a gas grill. He's also using a quality no-stick pan with butter as well.
If the eggs are not bubbling as soon as they're in the pan, your setting is too low.

it's actually easier to work with chopsticks, especially when you bring the outside, cooked edges in towards the center. a spatula is relatively bulky so i'm not able to move the egg in the pan quickly to prevent burning. give chopsticks a shot
You're an artist. That's a proper omelette, it looks delicious! We see so many videos of people doing omelette, where they flatten it to death. Your method is pure, simple and delivers a perfect omelette to the customer. I'd eat your food :)

also, keep moving the egg around while it's wet, so you don't end up with bits of scrambled egg.

Finally!!! a real perfect omelette, with no color on the egg....it's fluffy AND it's not flat. Bravo!
My instructors in France, always said a perfect omelette should be made in about 45 seconds..if it takes longer then ..it is s**t.
