  • @jordan:dashi is a japanese broth usually with a fish or vegetable base.,mirin was a sweet japanese rice wine,used especially in cooking,sugar,its added a sweet taste to a chicken.......why dont u try it,its yummy en delicious..i always eat a japanese food:)

  • hi i am from Jordan so this is new to me if anyone can explain few things for me :

    what is dashi soup ? what is mirin ? what does the added sugar do or supposed to do ? do you taste the sweetness ?i mean with a meal that have chicken and eggs salt and pepper seems like a better choice :)

  • @nowayiwill Dashi is a fish stock, it can be purchased in a granulated form at local asian markets. Mirin is a rice wine similar to sake but with a much lower alcohol content. It's a staple condiment in Japanese cuisine. As for the sugar it adds depth to the dish, and brightens the flavor of the eggs. I myself have never had this dish so I cannot say if you can taste it. But it keeps the dish form being monosyllabic. Hoped that helped! :)

    If getting condiments is difficult, you can use "men-tsuyu" or "menmi".

  • @CiaranMcVeigh Mirin is just sweet sake. They probably have mirin at nob-hill (fake one), but if you can't find one, get sake and add sugar, that's mirin. For dashi, buy bonito flakes, if you can't find it, it's sold at the iherb website.

  • @TheHylden1 Donburi is a type of dish that's basically stuff over rice in a bowl. Oyakodon is one type of donburi. Gyuudon (beef bowl) is another and it has a very different flavor.

    So there's not one donburi sauce.

  • @LolGurl27215 Dashi refers to the stock itself. It's made from seaweed, amongst other things. :)

  • I finally remembered to order some granulated dashi from amazon and it came today. The first thing I cooked with it was this dish. I am eating it right now and it is fantastic! I only broke from the recipe by adding a couple quartered mushrooms about 30s before adding the egg. It's great!

  • @Mark9111111 Dashi (sometimes sold as "Dashi no moto") is a flavor enhancer that has MSG as the main ingredient. It doesn't add a flavor, just enhances the other flavors.

  • @jmaruca Actually, dashi is quite a bit more than a flavor enhancer.  Only the instant dashi has MSG, and that's to enhance the flavor of the instant dashi itself. Not all of those even have it. I would definitely say that dashi adds a very important flavor to Japanese food.

  • @jmaruca Dashi, real dashi is a flavorful broth made from konbu kelp and shavings of cured bonito. It's the base flavor of many Japanese dishes. What you're thinking of is instant dashi granules like what was used in the video. Some do contain MSG, others don't. Fun fact, the chemical compound MSG was later derived from was isolated by a Japanese scientist when he discovered what caused the deep, savory, full flavor called 'umami' in konbu kelp and foods cooked with kombu kelp like dashi.

  • @iynn512 This is typical recipe, you can use other begs, however onion is the simply best option.

    Just stick with it at first time.

    You can use white wine instead of sake, but you must use mirin.

    Japanese meal without miring and dashi = Fail.

  • They do eat dog in Japan. It's not as common as in Korea or China but it's available if you know where to find it. I don't think it's a bad thing. Meat is meat. Some people in America eat rabbit. Nobody ever complains about that. A rabbit is like the cutest little thing ever!

    Actually, several Asian countries have dog dishes in their cuisine, including Korea and Japan. It's not eaten or liked by everybody though. And its not like the people who do are poaching pets off the streets to eat.

  • @frugihoyi Might be the amount of soy sauce you have added in. But the dish is supposed to be balanced out when served with white rice.

  • @canijustwatch Actually the amount of rice suggested by this recipe is also ridiculous. It's supposed to be a dish for one person, but that's enough for four people.

  • @frugihoyi Pretty much the only salty component is soy sauce. Reduce that and you'll have a less salty dish.

  • where could I find ingrediants like (japanese parsley, mirimi) here in the states..or sake? I live in a really small town do we dont have a local farmers market or whole foods or anything of that sort...we do our grocery shopping in walmart..would they have it?

    for japanese parsley you can use any of these as a substitute ( Celery Leaves,Chervil, Italian or Flat-Leaf Parsley).

    Mirin is sweet rice wine so you can use dry sherry + sugar, white wine or chinese wine will also do just add sugar to it.

  • @fuuchan27 thats not conventional breakfast for them. but japs they like put egg in every food they cook. its kind of boring in cuisine point of view. fact= japs consumed more egg than any other people

    You aren't allowed to use alcohol when cooking? If that is the case try using chicken broth. Its still good^^. tell me what you think.

    For the mirin sweetness add sugar to your broth.

  • @ HappyXHaineko I can find mirin in my local Kroger in the ethnic food section. If you have a Whole Foods market in your area, you can find bonito flakes and kombu.

  • @jenniferdiscgolfer I used two teaspoons for 4 servings so for one serving it would be half a teaspoon. it may seem little but mine turned out delicious :)

  • Please!!! The only ingredients you'll find here in America are two all beef patties, special sauce, lettuce, cheese, pinkle, onions on a sesame seed bun!!!!! Do we dare cook and eat anything that's not processed anymore!! I could eat japanese food everyday!! It looks so appetizing!!
