  • you can cook it on the range but oven cooking gives a more uniform distribution of heat which is what you want for a braise.

  • why cant you continue to cook it on the range top.instead of putting it in the oven.

  • @jargenlink because in the oven, the top part sticking out of the liquid will caramelize nicely. you should turn it part way through to caramelize both sides.

  • you won't be able to sear it off in a crock pot.
