  • PPSHCHIK hit it on the head. I grew up with Central Coast Tri-Tip/SM Style BBQ. It is a culinary orgasm when cooked over red oak.

  • oh my god... turn it ONCE

  • Now that's how you do it! I'm from Santa Barbara and been doing it like that for years. Even had a couple grills customized from Santa Maria. I go twice a year to bring a truckload of Red Oak back to Vegas.

  • RobertLewis2002 If you do not understand the comment watch foodtv or listen to people spew their 'Knowledge' by misstating(sic this is how it wanted to spell it) grilling(high heat) and bbq (slow with smoke).. If your being "forced" to watch video's you need to seek professional help. Check your glasses or pop your eyeballs out and clean them if it helps you read what I said.

  • Oh now my mouth is watering! Gotta head up to SM this weekend to get a fix. :)

  • I gotta quit watching Chef Johns videos late at night. Its killin' my diet! But I got to try this Tri-Tip steak! And yes, very nice grill!

  • This is steak porn

  • How can I get one one those grills built ? It would probably be expensive but for my next house I always wanted one like in the resturants, I entertain like that

  • you really want one?

  • wouldn't it be better on a closed lid?

  • closed lid would make it hotter, that way it would PROBABLY finish alot quicker. This way you get a nice crust n flavour and its still medium rare

  • NOOOOOO! some and ask that down here and you'll make one hell of a fool of yourself.

And WTF is righetti doing FAT SIDE DOWN, DUMBASS.

lol i'm a Santa Maria Style Nazi

  • your absolutely right. Q on

  • What's the name of the song??

  • Sigh. Any decent chef knows that they would get their fingers shortened, Yakuza-style for confusing a saute with a sweat. And that's as it should be - they are two different cooking techniques.

So, I am saddened that otherwise good chefs still confuse barbecue with grilling. I knew this wasn't barbecue the split second he said red oak. Red oak is fine for grilling - but over the length of time a barbecue takes you'll just get a mouthful of bitter tanins.

  • Honestly the only difference between a saute and a sweat is medium and high heat.. So loosen up and live a little as for bbq and grilling.. there all wrong, but were forced to listen to people claiming that they are bbq'ing on a grill ( impossible) and grilling on a bbq.. ( possible but wastefull). For the record bbq is done over low heat with smoke(hardwood as softwood gets nasty tasting) and can take anywhere from 4-48 hours. And Grilling is done over high heat generally with a grill.

  • wow. someone's forcing you to watch youtube videos?

  • Looks great!

  • Licious!!! :)................

  • That looks sooooooooo good

  • Looks fabulous!

  • i could listen to this dude all day. interesting insight into a variation of bbq.

  • Mmm grilled meats!

  • I guess if you're cooking over such a hot flame, it is the best alternative to lose a bit of the juices than to risk getting close to the fire.

Also at the end you can see it's still so juicy.

  • well...then use tongs... :-/

  • The video was very well done. But I must say that a tri tip is not a tender or very flavor cut of meat. The constant turning of the meat is taboo and presentation of the dish was non-existancat. I think you were misguided on this one...sorry.

  • AWESOME VID..THANKS.

  • holy santa maria!! my mouth is watering :)

  • hey no fair....you started it.....

  • this is what Sizzler uses to cut steaks from

  • I love that meat, I love that BBQ, and I specially love that hook-on-a-stick he uses!

    So simple yet so useful!

  • It helps with the camera being up close. You can see what it should look like.
