The dust is something like special effect.. to show that the kick is powerful when it hit an impact. Just like in other scenarios, ppls spit out tomato sauce or red liquid when being hit. Maybe they grabbed some powder in the hand and released it when it hit something or powder is added to the shirt or whatever . Or there could be a huge fan blowing powder from time to time , i guess ,lol.

Wing Chun/Tsun is far more practical and useful (in my experience) than most other martial arts such as karate or taekwondo. In my martial arts school, they have a bunch of difference martial arts ranging from BJJ, Muay Tai, TaeKwonDo, Iaido, Judo, Ninjutsu, and several others and Wing Chun is one of the top three practiced because of how useful it is. Trust me, it hurts, a lot!!!

I think Jet Li is some kind of a Jet Kune Do fighter, he is claimed as kung fu fighter, but he clearly uses the knowledge of every kind of martial art, and he didn't even hide this, I think every fighter reaching a too high level see things like Jet Kune Do see, as Jet Kune Do is not really a fighting style but a fighting philosophy.

Basically, the shoes are lighter, padded a certain way, and have a small amount of "empty space" between the actual foot and shoe top, so the performers can "touch" the opponent with the kick... but cause minimal damage. :)
