It is good that you have enthusiasm, but before starting sculpturing any animal, human, or part from the body, you have to lern anatomy. You need to know bones, stakes and the brawns, If you want to be maximum realistic, you also need to see wear are the venous, were are the fat accumulation, scin, hear.
When you are sculpturing you need to thing abouth things that are not in the surface of the sculpture. You have to start from the deep. Need logic, not paper.
The chemical formula for clay is alumina, silica, and water. Good luck in your adventure! It can get way more complicated beyond this starting point!
Secondary clays are easy to find in river or creek beds. If you can sculpt with it when you find it, it is probably clay. Be sure to harvest the cream of the crop, stones and other larger impurities not well mixed in the body will create a "punky" clay which is not very strong and very brittle when fired.
