i think its worth noting however, that although yall keep saying 'without yeast' when i believe you mean and should say, 'without commercial monocultured yeast' or something, cuz its not really yeast thats the problem... sourdough culture is wild yeast, and kefir is a yeast - bacteria complex. no matter what the yeast is still working its magic
@pocketsofthefuture i actually got to wondering, whats really wrong with the commercial yeasts? besides the fact that they come from the industry thats tricked us into adopting faux foods, it seems that it really boils down to healthy balance. natural cultures like sourdough and kefir contain a symbiotic balance of bacteria and yeast, as do our bodies. in bread terms, the yeasts help digest gluten and rise the bread, while the lactobacilli contribute much to the flavor.
