  • That looks great, Greg! I kinda wonder, though - what's the difference in taste between using dry bread cubes and the soaked ones?

  • @marboeus This is a good question. Panzanella evolved as a way of using up stale bread. Because it could be several days old and very dry and therefore hard to eat, cooks moistened the bread with water to soften and revive it. You could use fresh Italian bread instead and omit the soaking. The salad you create will be wonderful, I'm sure, but the texture will be entirely different compared to one made with the dried bread.
