  • was that 2% milk?  does it work better than whole, I would think the high-proteing milk would work best,.

  • @mglazarus It's the content of milk fat that ultimately determines texture. Lower fat content offerings allow less effort to texture properly, but also tend to lose their "shape" once steaming is complete.
