In fact, most early American writing used the English version of spelling, which includes "U" in many words (neighbour, colour, honour) , There is no good explanation why it changed, other than the letters were simply left out (some considered it a rebellion against the British) and it was eventually adapted by Websters Dictionary as the "American" spelling.
