You're forgetting some basic facts. 1) The Elder Gods in MK are immortal. 2) They have enough of power to destroy planets. 3)They can wrap reality, and nearly have no limits, hence they can copy the abilities of other fighters without needing their souls. 4) They can move at around the speed of light.
If there was an actual playable character existing in this game, everybody would just use him, and the game would be fucked up. Guys who can't die in a fighting game?
