  • @TheJalapeno2010 , Well vermicelli is vermicelli. it is very thin and short cut pasta product. You may find it in Italian shops or even regular grocery shops. good luck.

  • @TheJalapeno2010 , I used a mix of short grain white rice ( but you may use brown rice if you like) and vermicelli ( short cut thin pasta ). glad you liked the recipe.

  • This is not the correct recipe for Mujadarra.

    First the lentils should be washed and then boiled and you keep it in its water.

    You put the rice to cook with the lentils in its water and you fry the onions in olive oil then then you add it to the lentils and rice. And the rice should be egyptian.

  • @hazardkamal , The "small brown things" are vermicelli. the rice is pre-cooked and the lentils are boiled soft before mixing. thanks for watching and for your comment.

  • @thunderheart226 , This is a very filling meal . and if you are vegetarian, this will be a great substitute for meat, or protein in general. this dish is high in carbs but it is so good and delicious, especially if you make it the Egyptian way, with pasta and red sauce on the side.

  • @Monajeddah , Thanks for your comments. I usually cook vegetarian, no meat or chicken or even meat chicken broth in my stews (Yakhni). this is how i like it. if i want to cook meat, i cook it on the side. i think it is all about your personal preference and taste in food.

  • this looks yummy. i live in the south, and we have a dish called hopping john, which is black eyed peas and rice. it's very similiar. except we usually top ours with raw onions and pepper vinegar. it just makes me wonder, as the names are kind of similiar.

  • tranurse, i think almost all people for all cultures have this dish prepared in one way or anther, beans, legumes and rice are popular, filling, healthy and also inexpensive so this recipe and many more that are similar are familiar in many countries. i do make black eyed peas also with rice and will post it in the next few weeks i hope! thanks for your comment. by the way , i like your toppings on hopping john!

  • yes, the yogurt is eaten with this dish . You may add it on top of the rice or eat it on the side.

  • first i though that mujaddare is vegiterian fodd and it got no protien bet then i realised that i has alot of protien .D

  • wathtehill, it is healthy...you can even make it healthier by using brown rice for more nutritions and fibar. also you can use less oil for browning the onions, this way the dish will be very healthy!

  • Yes, you can use brown rice. you may pre-cook the brown rice and then mix it with the pre-boiled lentils and then continue with the recipe. thanks for coming by.

  • Pressure cooking can save you a lot of energy in boiling the lentil. Also, it is advisable to wash the lentil before boiling it. Cheers :)

  • Thanks for the tip...but i do not own a pressure cooking pot :) and it does not take long to boil the lentils really...half an hour or so and they are done.

  • Good recipe. I do it a little differently. I cook the onions, then set them aside. Then I cook the lentils as you do, but I reserve the liquid and all the vitamins and add the rice and more water if needed. All the spice is added at this point too, to spread the flavors. After the liquid is absorbed, I let it sit covered for a few minutes to let the steam spread evenly through the dish. The rice always comes out perfectly if you just wait before serving.

  • thanks for the recipe, but this is a version of mdardara, although the traditional way (lebanese, according to my birthplace in lebanon) would be to cook the rice with the boiling lentils after adding the caramelized onions (lots of it). the taste will be different than your way. about mjaddara, it's different no? :)

  • its still a poor man's dish, u needent fry anything or put so much salt in it, and use brown rice!

    and yes some steamed vegetables or a curry would go nice..

  • I grew up eating lentils and rice though not in this style. The onions (garlic sometimes) were added in the lentils while they were boiling. In any case, rice and lentils is a hearty dish and it really does satisfy.

    the spices i use with this dish are salt, black pepper and cumin. i do fry the onions too and put them on top sometimes ,but this is a quick recipe that i did not take my time to fry the onions and do it. delicious!

  • I'm thinking this is the Arabian answer to what to do with leftover rice. It reminds me of Asian fried rice but instead of veggies and eggs this recipe calls for lentils. I was wondering why the spices were added when the rice and lentils were already cooked and I guess that makes sense because you're using rice that has already been cooked.

  • MadamGul, this could be the answer to what to do with leftover rice, at least this is what i do! but usually this recipe is cooked with "new" rice, but from my experience i found out that you get better results when you cook it with pre-cooked rice. i add the spices at the end of the cooking process too, whether its new or old rice.this way you get to taste the spices better.thanks for coming by.

    In Pakistan we eat something similar to this. Instead of mixing the lentils with the rice, we put it on top of the rice like a lentil soup.

  • Good basic recipe. I've been making lentils and rice in the slow cooker. Think I'll try cooking them a little less, drain, then saute the onions. The dish might be a little stickier and different, but good. I would prefer a hot curry for the spice and eliminate almost all the oil by using a spray oil and just browning the onions to eliminate the fat. dkw

  • No matter what recipe or method you cook this dish it is good and delicious. You may omit whatever you do not like or add anything you like to it, as long as the basic ingredients are the same. thanks for your modifications and coming by too.
