In Maryland we also clean the crab meat to remove any excess shells. I hate shells in my crab cake. Also what's in the jar? In addition is there a certain brand were you don't have to clean the meat. We also like to broil our cakes.. G&M in Glen Burnie is the BEST!!
thank you very much! i can see you care a lot about your local food. we're from new orleans so we get into it too! gonna cook these for a special friend of mine tomorrow. thanks for the help!
What a joke! Ordering a fried crab cake in Baltimore is like ordering a filet mignon well done. You NEVER fry a crab cake! This guy has no clue. We laugh at folks like this who think they know about making crab cakes. NO CLUE!
jmshulk is right, too much crumbs, his sauce?Right too,But the best way is to have some crab mustard in your cake, you can fry or fast bake like G & M Restaurant in Linthicum MD does, the only reason I went there was because I didn't have time to go to Clark Island,I was happy with G & M,they use the Jimmy(male) mustard, the only way to go!
His sauce all it contains is Maynaise, old bay, hot sauce, lemon juice, worcestershire suace. thats all and he added way to much bread crumbs to the crab cake mix. a better way is to let the mix sit over night and let the egg bind the ingredients together naturally and then you can form it without adding any FILLER then you can coat the cakes in crumbs i prefer saltine crackers because they are plain in color and when you cook they do not burn because ritz crackers have alot of butter
he's just trying to sell his "sauce" - the best recipe is on the Old Bay can. Broil with a bit of clarified butter on top turning when brown and continue til other side is brown.
The best are the 22 dollar ones at tim-buc-toos in baltimore,md. ate there once and the mthr fckrs are the size of a softball and are so tasty you gonna wanna fly one back to ohio on your way back homer.doh
You should have your own cooking show on TV. You made an art of making crab cakes...did not leave out a single detail. Once I started viewing part 2, I drooled the rest of the time. I checked out your website and will be ordering some crab cakes soon. I live in Utah and crab cakes are unknown out here; or if you can find them, they are horrible. You are truly a culinary artist.
here is a good authentic md sauce.....3/4 cup mayo....4 tspoon worstechire....4 tspoons old bay.....parsley to your liking.....tspoon paprika....small jar pimiento....4 drops hot sauce per lb of meat 1 -2 teaspoons dry mustard 3 slices uncrusted whitebread.....take fork or blend till bread is liquid

I was very interested in this video.
However you just wasted 5,376 people's time who spent their precious time watching part 1 for absolutely nothing.
When I saw you dump the contents on the jar into the bowl and mixed it with the egg, I suddenly realized that I had been hoodwinked.
What's in the jar, and do you enjoy wasting people's time with a recipe no human being can duplicate?
6:05 in... "Excellent meat too, SAME recipe."
WHAT RECIPE fella?

Some people fry them, some people bake them. I have always had them deep fried, I have never tried them baked. I've always enjoyed them deep fried.

He should call this an "eastern shore of Maryland" crab cake, or "southern maryland" crab cake. Only Baltimore really knows how to make a crab cake.
