I think my faaaavorite thing to do for leftovers isn't actually mine, it's from my fiancee's parents. When they've made steaks on the grill, they tend to make them en masse, and then they'll easily have one or two leftover. So, the next night, they stick some cheese and seasonings on them and broil them real quick for some simple steak ranchero with leftover pico and guacamole my fiancee makes (the family swears by it). With THOSE leftovers, they shred and make nachos the next night!

@TheSeraph74 I got them at the Asian grocery. It's sansai (mountain vegetable) or potherb. You can find them in the fridge section. If not, you can use whatever veg you got like spinach, frozen peas, etc.
@MrJingjong Thanks muchly!! I sourced some of my local online Asian grocery stores and found some sansai, and can't wait for it to arrive!! So much more interesting than 'ye olde English' veggies... thanks for the intro to some variety to my convenient veggies!

well, a "go to" at my home for leftover chicken (or other meat) is potpie!or meat and dumplings!easy, cuz usually we have gravy and potatoes *unless we had chicken and rice, inwhich case: chicken fried rice!:D frugality can be sooo yummay!!!

Looks good! Leftovers are just eaten as is. I only get creative when I am bored and I will throw stuff together as a first night's dinner and have it for leftovers the next day.

I'll take it home, do a little research, then come up with something and see how it goes. Sometimes, it works wonderfully, sometimes it flops. The point is, you're always learning!

Where do you find the motivation to make your own food? I'm a grad student who is trying to improve their cooking range and ability, but find it really hard to not just resort to eating out. What keeps you motivated and in the kitchen? I know I would save a lot of money in the process!
@Theome Being poor makes you creative and resourceful real quick. I also researched a lot of street food from other countries and looked at how really good food is made for very little money. This is exciting because you learn new skills and create things that people wouldn't otherwise think of. You just gave me a great idea for another episode, thanks! i usually take leftover veggie and meat give then a nice color in the pan whit sesame oil or butter and add spicy goodness and make them release the flavor then add whatever broth i got on hand and bring to a boil and add basmati rice and stick it in the oven 20 minute add something green.. voila i got dinner
This looks absolutely spectacular! And thank you for the great tip re: the soft boiled eggs. Leftovers are a challenge for me as my family don't usually like them - if i cooked something like this, though, I think they'd change their minds!
