There's completely off-the-head stuff (like Eminem's "Given Word" freestyle with DJ Stretch Armstrong), then there's battling which is usually off-the-head stuff but with a written punch-line at the end, and then there's stuff like this: written verses that are used as a freestyle to do over different instrumentals (search "4 Verses Eminem" to see what I mean).
