Its way easier if you skin it when it is not frozen and I don't bother with the hook I just hold onto the fish. I skinned and filleted about 80 last week. We call them Cusk or eelpout here in the states though. Try just grabbing the skin with the pliers and holding the head and pullwith both hands.
Oh, yeah. It's a total gourmet thing. Spawning's out for this winter here in Finland. We've had so damn cold for like 2 months, no chance for catching'em the hook way. Only netting or using a kind of a trap.

You're right, but a skinny hook makes a whole lot better clip :)
