You need a woman to be pregnant in order to have breastmilk.

And once she gives birth to her kid(s),

most of that milk would (and should) go to the baby (or babies).

And, perhaps surprisingly, cows also need to be pregnant in order to produce milk. So we (forcibly) impregnate cows yearly to keep them producing milk year-round. (We also starve their calves, sell them for veal, etc.)

Human breastmilk cheese sounds interesting, but definitely not sustainable.
