I scuba dive as well. But, not all urchins contain a lot of gonads. Ive found huge urchins that didnt have any inside. Then, right next to those, I found smaller ones full of gonads, but again since they were so small it wasnt even worth the effort. So, I'm not sure if it depends of the season, location, species, or what. If its legal for you to take uchins where you suba, try opening one up and see what it contains. It would be a lot of work to collect enough to sell. Where do you live?

if you are careful you can grab them with your hands, but be careful of the spins as they are very brittle and will break off if they enter your skin. Plus they dont act like wood splinters, for they break up into smaller and smaller pieces. So you really have to dig them out. If you are going to be handling a lot of urchins its a good idea to used some gloves. Urchins with LONG spins you should used tongs and some scissors to cut the spins, then you can even touch them with your bare hands.

Crack the urchin vertically from the top down, just enough to get the blade of a knife in. Kink the blade sideways and the urchin splits into 2 equal parts (1 side will have 3 strips of uni, 1 side will have 2). Scoop one side out with a finger, swirl around in your hand with water ( like gold panning) and the crap will separate from the goods. If the quality is good you can dry it with paper towel. Professionals use crackers that cut and split vertically all in one swoop.

I've been eating urchin for number of years. I find removing the mouth to be much simpler, as you can wash out all the guts while the gonads stick to the walls. Then you just remove the fillets with a spoon, voila. I've eaten live urchin at fish markets and thats how they served it as well -- its a nice effect to use the urchin as a bowl and watch the spines move around while you eat. Probably several different ways to eat uni, but yes you came off as patronizing when you called me a "rookie."
