Hugh Jackman shouldn't play Snake in the first film because Hugh Jackman looks like the MGS2 version of Snake. The thing is if they are going to create a series of films, they should start with Snake Eater, then Peace Walker, Then Metal Gear, Metal Gear 2, Metal Gear Solid 2, And finally Metal Gear Solid 4. You are right, Sharon would be in great fit and her age will be also natural fit for the role. She can be trained to look like an old female soldier (the white suite would be great fit with that gun "Patriot").  She can do it only now (not 20 years ago).

Bale is a horrible actor with absolutely no respect for the people who actually make the movie good.

The Dark Knight was a great movie, but because of Leger NOT Bale. His performance was mediocre at best.

And Terminator, just a waste of time. The same would be true about a MGS movie.

Jackman on the other hand seems (to me) to be a great guy whom happens to be a great actor. He has respect for his coworkers and his personality would fit perfectly as Snake.
