He thought that Anita Baker didn't bust a rhyme to make her white guests more at ease. He 's trying to be nice here. Don't punish him, he just doesn't quite know how.

I went to a Chinese owned restaurant, they weren't wearing hairnets or hats, no gloves, did not wash their hands, dropped things on the floor and added them to the food etc etc. I have never seen that at a white owned restaurant. He is making a point anyway, he is trying to say people would expect that, but he is complimenting Black culture saying there is more to it.

Other races have their own identity. This is a good thing.
