I have not bothered with new i-movie because it does not save movies in .dv format what you are describing is high compression which messes up the picture and sound.

I use i-movie from my old G4 not sure that will help you but keeps the quality higher than anything I have seen on my new 07 i mac :-)

This might be related but when I use skype internet calling service the internal microphone is sometimes full of static for no obvious reason and sometimes not ?

Sound was a little low, try and increase the input volume in the system preferemces / sound / input. Ohter then that the quality is great(It's apple so know wonder its great :P). Oh yea the macbook onboard speakers aren't realy loud, I just attach my headphone/speakers for better volume.
