I have to say a BIG thank you to you for this video. I have been attempting to make good old fashio fudge for the last year. My girlfriends and I exchange goodies for Christmas and last year I decided to make fudge using the easy marshmallow fluff recipe. Result was soft chocolate...I only had a few hours so I ended up making fudge brownies with the failed fudge.
This video was the only one that truly helped me get it right!! I made white chocolate candy cane fudge....yummmm.
i like this recipe, it's very authentic and simple. i like the idea of making everything by hands (even the stirring process). no preservatives, no corn syrup. great approach!
@cuddysa You cooked it too long if it got too hard. Fudge is supposed to be 240 degrees ( soft ball stage) so either used his testing method or better yet buy a candy thermometer to take the guess work out of it. Also don't try making candy when it's raining, or very humid, it takes on the moisture in the air and may not set up right. Hope this helps.:o)
@chyorneycat - Demerara sugar is so named because originally it came from sugar cane fields in the colony of Demerara, which was a region in South America in what is now Guyana that was colonized by the Dutch in 1611. (So says Wikipedia.)
@chyorneycat It is commonly referred to palmsugar... Fot this recipe i would firstly put all the sugar in the pan and let it caramellise. when it caramellises put in the condensed milk and let it fully dissolve... Then take of the stove and put in the butter. when the butter is in the mixture put it shortly back on the stove... put the mixture on a piece of baking paper and let it cool down shortly... form the fudge a bit in the shape you want and put the fudge in the fridge, worked for me!
I've read several articles on making fudge, and watched a few videos, and for some reason, no one can seem to agree on when to stir or when not to stir. This video says to stir right after boiling and stirring for several minutes, other articles say to let it sit undisturbed for 10 minutes before stirring, and there are varying opinions on using high or medium heat. It's very confusing. I can't seem to get a consistent fudge.

Just made this for the first time and..... OMFG ITS AMAZING
I added some vanilla extract as the mixture started bubbling and I ended up with this amazing vanilla fudge at the end it was so awesome
