I've always been a Chef Buck fan. The girlfriend, well, not so much. At least not until I showed her this latest installment. She loved it. We both wanted to thank you, especially me, because instead of Olive Garden on friday night guess what I'll be munching on? I can only pray that vegetarian chicken nuggets work their way into the mix, but all I'm really sure of is "pine nuts" making an appearance.

Quite the timely recipe! I've had a hankerin' for kale all week, and beets sound really good too... While I'm sauteing the kale into a salt & vinegar mush and boiling some brats in beer, I can have a jar of pickled beets. Brap, poot.
Yeah...I need to figure out how to get healthy vegetables into a burrito so you'll give them a try (kinda like how we get my mom's dog to take his heartworm medication). I did manage to get a little Eddie Elgar in the background to lull you into a false sense of security. It's a first step.

you know what's really funny...I've been wanting to make a kale video for about 5 months (I finally had to give up on Camera Girl shooting it). But really, all of my cooking videos are kinda healthy (Trailer Park Pear Salad being the exception)...maybe I'll get a little more fatty calorie with some future cooking vids, but be warned, I've still got a Beet Greens video in the pipeline (I'll try not to put Wagner in the background)

@edtomorrow ...yes, like most newspapers, the NYTimes is struggling, but it's still a better bet than USA Today (hell...I wouldn't even try to make a PBJ with a damn USA Today)
this recipe makes 2 ample salads and it's pretty much the entirety of our dinner when I make them...for 2 side salads, I'd halve the recipe. I've thought about adding minced ginger to the beet/tomato mixture, but haven't tried it yet, though. Hope you like it. Massaging a little salt into the kale really turns it into a friendly salad green.
