I myself work at a restaurant that is usually slow, and having to put gloves on everytime you go to fry something can be time consuming, especially if you have got a lot of other shit to do. It's even worse in a fast food restaurant where people want shit NOW. The few little stings are worth the minutes saved.

Not that any of you care, but this guy is supposed to put the chips into a basket, then into the fryer. When I was in high school I worked at a taco bell in hawaii for a couple years. We always drained the oil every night, and put in new oil. Btw, the same oil is used for the cinnamin twists and the nachos, taco salad shell , and chalupa shells.

Take a tip from me, the only thing to stay away from is the rice, we had to put 2 huge scoops of shortening into each 4 cup batch of rice, mmmm ! ^^

Correct. The proper way is to use the basket and tap the lid up and down as they cook. I'm also unsure if the timer was set. It seemed like they cooked a long time (particularly the one's he would have pulled out by the third or fourth scoop), but he was looking at it before pulling 'em out, so I'll assume he did it off camera.
