  • HEY!! I just ran into your chennel here I saw collard greens w/ turkey watching the pound's and I love how U did it and corn in corn bread girl got try that soon!! having gumbo for christmas.

  • Carolyn, I make my Greens the same way except I never used the chixken stock as an addition. I am assuming it will add even more flaa!? I am doing the usual for Christmas, so I will let you know how I like using the stock. The cornbread we make the same as well only I use drained whole kernel for crunch...it's like a Mexican cornbread and my son loves it that way. I'll have to try creamed!   • Wow that looks and sounds so effin good lol. Im from Australia and we dont have collard greens, not that i know of and we dont make corn bread. I would love to munch down those greens with that corn bread it sounds so yummy.

  • @sangriakitten The cream corn helps with the moisture. You could use fresh corn on the cob by cutting the kernals from the cob but you'd have to use the back of a knife to scrap the juice from the corn cob (its alot of work but worth it). This is essentially how you make homemade creamed corn.

  • @redsunshine07 You can saute some onions and garlic in some olive oil, season it up, then add the water. Basically create a flavor base out of vegetables.

Your style, presentation, professionalism and not to mention your natural demeanor is refreshing to see. You are definately the next cooking star, if not already. I make my greens exactly the same way, except I add some liquid smoke to my greens. Also, and no disrespect to your husband or boyfriend, you are a cutie pie too.   • @goldenbeauty2010 It helps balance out the acidity of the vinegar and some of the bitterness that could exist in the greens themselves. You can use honey instead too. Good question :)

  • @mszuzu24 Well, if the spice is what you're not feeling, I guess you could use regular vinegar or apple cider vinegar. Here's a tip, about the last 30 minutes of the cooking time, take a few greens out and place in a bowl. Drop a couple drops of the vinegar of your choice, taste it. Chances are if you like it then, you'll like it later. That way you won't alter the whole pot.

  • @natrlchallenge LOL See I'm not really scared of the stems either but in some soul food driven families they will judge and sentence you for have stems lol. And they add more fiber anyway and like you said just cook them slower :) I've even baked my greens in a dutch oven, talk about good and no fuss. Glad you liked the video!

  • Girl, I wish this was smell-a-vision. Those greens looked as good as my mama's. The cornbread was similar too, she used whole kernel. Throw some hogmaws and chitterlins in there I will be right at home. You go girl.

  • I made this on Saturday and gave some to my mom. She is the most critical person in cooking soul food. She complimented with instruction. LOL (that's a criticism for those who don't understand Mama language). Her one comment was to put some more sugar as the greens were still bitter to here. Thanks Carolyn, I'm going to be the talk of church after making my (your) red beans and rice dish next. :-)

  • @matthew5and9 Don't worry I have a mother that also gives instructions (criticism, that's what it is huh lol) They could have very well used more sugar depending on the age of the greens (mine were young) and how tangy a person likes them. Mine tend to be more tangy/spicy and I've had some that were a little sweeter and Honey that won't stop me from eatin' 'em. Your church will definitely like the Red Beans, enjoy!

  • @rodrick4500 Preparing things differ from person 2 person, culture 2 culture. Ok so you like to add wheat bran, absolutely great! But Honey I certainly wasn't wrong for using creamed corn or even fresh corn if the recipe called for it. That's yummy too :)) Pressure cookers are great but not everyone has one so I try 2 stick with utensils and tools that are commonly found in the every day kitchen. Thanks for watching :))

  • Here we call that yum yum cornbread when you put the cream corn in it. I cant stand the bagged greens bc of the stems. That why I go to the farmers market where the cut them how you like for cheaper than the bagged!

  • @1229light Yeah make your own greens and freeze them in portions for 1 or 2 and you can have YOUR OWN greens anytime you want :))

  • I like that little twang that the vinegar adds...I saw someone on Foodnetwork use lemon juice..I tried it, it was just as good. Do you have a big family or you just like entertaining folks with food..thats a lot of greens you got there..lol..
