  • some vinegar would be good too it burns calories,and some sweet onions, chives, or spring onion,on the side to top it up would be nice, maybe without the tomatoes because it can sit in the fridge and get too acidy, and I think chopped up smaller would be a nice idea too, it just looks nicer with the size of the chick peas. No salt, you already have that in the chick peas. Also a little robusto dressing is also very tasty the english cucumbers are best cos no seeds you need to address that ty.

  • I actually made this chickpea salad this morning so that the flavors could 'marry' in the fridge all day and even prior to 'setting' it is so flavorful and wonderful! After a day in the fridge I am sure it will be mouth watering. I used the cilantro and fresh organic baby dill and the only 'change' I made was to add a small can on sliced olives since we do so love them and the whole olive flavor. To me this would be the perfect hot day afternoon meal with a piece of crusty Italian bread.

  • Dear Betty,

    I eat chickpea salades quite often. It is great if I have a late shift at work to take with me for dinner. I have a tip you might like. I also put a little bit of lemon juice on it and sprinkel it with some little feta cubes, very low in fat.

  • @swara1996 I typically use extra virgin olive oil; for salads, I sometimes choose the lighter-tasting variety. I usually get the store brand.

  • i make this salad all the time and just came up with it on my own years ago! i didn't know there was a recipe for it out there. i use italian parsley instead of cilantro sometimes and sometimes i add mashed garlic to make it more zippy

    look at those delicous colors of your salad!

    You don't add any vinegar to this salad? I'm thinking of a splash of mild red wine vinegar or apple cidre vinegar?

    HQ Oive oil is good for you, it won't hurt your heart, just be econimical with it if you watch calories....

  • I don't like bell peppers, cucumbers, or tomatoes but I would still try this salad because it looks so delicious! Awesome recipe.

  • You could keep the chickpeas, and maybe add chopped celery and red onion (or some other colorful and tasty combination of vegetables), and don't forget the cilantro (or your favorite herb)!

  • Don't you just hate the wait for the Summer fresh tomatoes? Those cold storage things are not very good but what can you do? Sam's does carry some pretty good ones though to tide us over. This looks very good Betty, thanks.

  • Hi Betty, I can't wait to try this, it looks great. I'm going to just add a dash of balsamic vinigar as we are vinigar nuts. But other than that I am going to stay with your exact recipe as they are always spot on. I'll tell you how the vinigar works out.

  • Looks and sounds great. It reminds me of our favorite summer dish here in Georgia ("our" as in the wife and kids) Cucumber salad,grilled steak,sea salt crusted baked potatoes,fesh grilled corn on the cob.MMMMMMmmmm Im hungry now!

  • I was thinking the same thing...maybe a little balsamic vinegar or lemon. An avocado would give a great richness, but with trying to keep with the lower fat content, I can see why Betty would omit that ingredient.
