In the UK we used to have a programme called 'It's a knockoout!'

It wasn't as brutal as Takeshis' castle, but it was entertaining.

The closest thing we have now is an annual event called 'cheese rolling'.

People throw themselves down a very steep hill to win some cheese.

I doubt that it comes down to just guessing. After watching a couple of episodes with the doors, you can sort of tell which ones are paper and which ones are solid, because the paper ones tend to have a little space where they forget to cover. Also, they tend to vary a bit in color and sway a bit if it's windy. However, sometimes they're pulled off so well that you can't really tell which one's which and you just have to run and hope it's the right door.
