You are quite right; the simple ingredients I used are a good basis for a tasty stew. I am sure your suggested extras would make a lovely stew.

Thats your choice, I would personally peel the potatoes. Maybe if you decide to try the recipe you could have half the potatoes peeled and half with the skins on.

Nice to hear from you, and you must try the chorizo. I do use chorizo quite alot as it really does have a nice meaty delicious flavour. I have just recently used the cured chorizo in a paella. I decided to make a chicken with chorizo paella. It was very nice. I now just need to find the time to edit that vid so it may be a couple of weeks or so before I can release it.

How much did you use?

@blutey I quite often guess the amount of potatoes and water in my dishes, so I can't really answer that exactly. The main thing is not too much water so it’s all watery but equally you do want some juices at the end. It sounds to me like you got it about right.
It would work with the other chorizo that is cured or smoked but I find the uncooked version to work better with this dish
I have made another video recipe with lentils using the cheeper cured chorizo and that was very nice.
Just curious, have you ever tried it with a little mushroom and/or green pepper added near the end of cooking. I think it would work if you like em. Kinda like the Hungarian Goulash soup which is also superb with crusty bread and a glass of robust red wine.
I am looking forward to making this dish again. I am going to gather all the suggestions that everyones made including yours and see if I can come up with something special. Most of the time I have made this dish I have always kept it simple. I like the suggestions and may try them out. I was wondering though, would you recommend experimenting on expanding the recipe, by adding for example some leek, or onion, maybe carrot, perhaps celery root or some diced rutabaga, or several of the above, to flesh it out a little? Then again that might mask the chorizo flavours, and I wouldn't want to do that. Also part of the charm of this dish is it's wonderful simplicity.
The thing I like about this recipe is how simple but flavoursome it is. However I encourage people to experiment and make the recipe there own. My suggestion is to first try the recipe as is. Then next time add some extras that you think you would enjoy. Onion garlic and leek would be nice as a base. The reat is up to you. Let me know how you get on :)
One of my subscribers suggested the following and it sounds good to me. :)) Fry some chopped onion and garlic with a few bay leaves and chorizo until it all has a nice colour(3 to 5 mins) The add potatoes and water. Cook until potatoes are soft. Just before you serve add some extra virgin olive oil on top.

I think I'll try the basic one in this video one day, and if I like the principle I may try building more onto it to see how that grabs me. @ibomin I have found some possible alternatives similar to chorizo. The problem is if you find chorizo hard to find, you may have the same problem with these. 1. (Longaniza Philippines version of chorizo) 2.(chouriço Portuguese) 3.(linguisa Portuguese) 4.(Mexican chorizo). Also one of my subscribers made a good suggestion for a spicy Italian sausage. You may have to look around to see what is available where you are. Hopefully you find something suitable and enjoy the meal

Just to let you know, I have another video recipe on youtube that was similar to your suggestion and includes lentils.
Have alook at that recipe of mine, it's similar to what you were suggesting but also includes lentils.
