  • Digging the western style "make the damn grill a BBQ" thinking...I'm thinking about the possibility of adding smoke to them? Maybe add the smoke pan to some low coals for like an hour or so while flipping them, without sauce, then fire up the coals AGAIN, and get that sauce bubblin' goodness going to finish? Hmmm....I still have a Weber, after all this IS Cali.

  • Have you ever seered them first and then 'bake' them? I seered some the other day with some blackened season, then put them in a pan with a bit of beer, chicken brother, garlic and a few other basic ingredients. Added some potatoes and onion to it and let em cook on the grill until the potatoes were. Came out REALLY good. Basically just reverse of what you did. I got tired of the things falling apart when I wanted to put them on the grill out of the pan lol.

  • this is zackly what you don't want to do with..( country style pork ribs) .. first off they are not RIBS ! they are pork shoulder cut to mimick a rib, so you must treat them as a pork shoulder...long & slow baby, NOT on a weber.. thats grilling ,..these need a smoker. then foil ect... your stuff looked chared & dry.....Weber?
