  • It's really hard to find long green onion... it's either small green onion (Chinese green onion) or leek, which is too thick|||

    I really got the courage to make it when I see the comment here (although I still think that it's complicated...)

    The hardest part for me I believe is the yuzu peel... how am I going to make enough yuzu peel for a nabe for 8 ppl!? Can I just buy it? (Yes! I know I'm too lazy!)

    The foam will make the water not clear and kinda dirty-looked, it also contains many unncessary elements for your body. So yeah, you should remove it.

  • Ooishii sooooo!! Use sake that you drink. It's an essential ingredient for much of J. cooking, as is mirin (Japanese sweet cooking wine). Mirin is often available in Western supermarkets

  • iron chefs told us that there is no such thing as a "cooking wine" when choosing wine to be used for cooking you should use the wine that you can also drink. and the same goes with sake. like you'll even find "cooking sake" even in japan anyway

  • Can u please tell me where can i find "Sake" in United states ? I found one in a Oriental grocery store and they told me its for drinking (like a wine) and not for cooking ... so I did not but it ... can u name a brand that you use or exactly what should I ask for when I go to buy sake the next time ? If Sake is not available can I use regular rice wine ?

  • Made it! It was incredibly delicious, and not as hard as it looks! My carrots may not have looked as decorative, since they were just chopped, but any mistakes I made were from starting late and not paying enough attention and they didn't ruin anything. If you're afraid to make it because it looks too complicated, just give yourself a little more time than you think you'll need and give it a try anyway. Even if it's not perfect, it'll still taste good, and it's practice to do better next time.

  • @LegendaryGoldDragon It's "Kirimochi," which is a type of rice cake. If you don't have an Asian food store nearby, health food stores often seem to have mochi, though it's not really much of a health food. Tons of calories, apparently.

    Requires so many premium ingredients, and so many different cooking methods-definitely not for beginners.

    I think I'll stick with the simpler dishes and leave these national treasures to those who can appreciate them.

  • @shrynakesavan If you boil dried out meat flakes with water, bonito flakes is going to just turn to tasteless soggy bacon.

  • I never had this exact dish when I lived in Japan, but I did have something approximating it. Now that I'm back in the States, I don't think I'd be able to make this dish except on special occasions because it's way too labour intensive and the ingredients cost too much (oysters, exotic mushrooms, yuzu, kombu, mochi, the spices, etc. not to mention all the utensils.) I'd also really be worried about the high sodium content. You have to watch that with a lot of these dishes.

  • @kurisutokaochan There are many Asian supermarkets in the States nowadays. Normally they have all these ingredients at very affordable prices. Good luck in the kitchen! ;-)

  • I wouldn't allow a dog to be so close to food during cooking, let alone allowing him/her on the counter top where you're cooking.

    Anyway, Japanese cuisine is great, but the downside is the large amount of sodium used, resulting in high-blood pressure and related health problems at mid to old ages. Reduce the amount of salt you use when preparing Japanese cuisine.

  • @enkopingsbo It is difficult to do once the fish is filleted. Easier to cook it and just remove the skin after.

  • @chocolatepugs you should read the book "Japanese Women don't get old or fat" its all about this woman's mother's 'tokyo kitchen' and what to have stocked and recipes and such.

  • @chocolatepugs Many of the utensils they use are very specialised and often not strictly necessary. It's just that japanese ppl are often very meticulous and attentive and the cook in this video especially so, that they like everything to be so perfect. (Which is part of the charm of this chef!)

    Stuff like the carrot cutters and steps such as cutting the pattern on the mushrooms are not vital. (Hella pretty though).

  • @amigos174 not really. A bit time consuming yeah but this looks like its possible to prepare it an hour and a half with prep time. Sadly though where I am from the ingredients are going to be hard to come by.
