  • We made this last weekend and it was PERFECT!! Our guest was a cioppino afficienado so I was worried about the sauce but it passed his scutiny. We omitted the fish and added lobster, crab, scallops, calamari, shrimp, mussels and used sock it to me sauce. Delicious

  • @caligirl794 Ingredients: 2 tablespoon olive oil 2 tablespoon butter 1 rib celery, fine dice 1 onion, large dice 4-6 cloves garlic, minced 2 cups white wine 1 bay leaf 1/2 teaspoon dried oregano 1/2 teaspoon red pepper flakes, or to taste 1/2 teaspoon Worcestershire sauce 1 can (28-oz) tomato puree, tomato sauce, or plum tomatoes crushed by hand 2 cups water, clam juice or fish stock, more as needed to adjust thickness 1/2 teaspoon salt, or to taste

    1 cooked Dungeness crab (about 2-lbs), cracked and cleaned, or 1-lb frozen crabmeat thawed

    12 oz fresh cod, cut into 1-in pieces or any other white fish

    1 pound raw shrimp, peeled and deveined

    1 pound fresh mussels

    1/2 cup chopped fresh herb (usually Italian parsley and/or basil, tarragon, or any combination)

  • I just made this and it was amazing! I used different kinds of seafood in mine; clam meat, mussels, catfish, and squid. I also added more pepper for added kick.

  • Hi, Chef John! I would like to know if there's something else which is equivalent to the wine in this recipe? Since I don't want alcohol. Thank you in advance.

  • Alcohol has its boiling point at 78°C.

    Once you boiled your cioppino up, only 4% of what little alcohol you put in with the wine will remain.

    A ripe banana will really have the same amount of alcohol.

    The only real reason to worry about the wine in a cooking recipe is when you are a former alcoholic or cooking for one.

    That said, try to substitue it with chicken stock laced with a little of good aromatic vinegar, that's the closest I can possibly think of.

  • if i knew i was going to have a last dish, based on old age, this would be my farewell dish~ served with a bowl of clam chowder or chowda~ we eat our bomb cioppino @ the original fish company in los alamitos,ca! SUPER BOMB!!

  • Cioppino is a great dish and I agree with Chef John, don't cook it twice the same way. One of the great things about cooking is exploring variations. Cioppino benefits greatly from fresh local seafood so I use whatever is in season when I make it.

  • one small criticism: all those seafood are overcooked, especially the fish and the shrimp. i will put the mussel in first. shrimp will probably go in the last, overcooked shrimp is no good at all.

  • when i was in school, we made this and I just ate what i could with a spoon and then cracked the crab..scooped the muscles out and what not. I dont know if there is a definitive way to eat them, but thats how we did it in pittsburgh. lol..
