Watch the fight and see how Sauske tried to use everything and it failed. Sasuke won by default due to the over use on the Mongakeyo Sharingan against his brother. Sasuke never had a really good chance to defeat Itachi. Itachi died cuz of himself. Last time I check I saw Sasuke about to shit himself when Itachi was walking over there to take his eys out instead he poke his head and said Forgive me Sasuke.

Jashin is not the one keeping him immortal. He was a experiment by his cult. The rest of the Jashinist cant inflict fatal wounds without killing themselves too. But Hidan was PERFECT because they MADE him immortal. I dont know the details but Hidan killed in the name of Jashin but Jashion was not the main source of his immortality. Technically there was nothing really "immortal" about Kakuzu. He just had 5 different hearts (one for each chakra nature) that he could move anywhere in his body, and could only die if all 5 are destroyed. Where as Hidan apparently really did become immortal through his worship of his cult god Jashin. So yeah, if we all worship and praise Lord Jashin then we all get to live forever! :D

Actually Hidans only immortal because his cult-like faith, Jashin (a sign of it is the cirlcle with the triangle in it), supports killing and anything other than utter destruction is considered a sin. His god gave him immortalty only if he continues killing. Actually, Kishimoto did say he was dying slowly, of malnutrition. The two weaknesses to his immortality are that he has to eat or his body won't be able to keep up with the jutsu, and he has to keep sacrificing people in his 'ritual' to maintain its effect.
