For this recipe, I used Canola oil which I use for my daily Indian cooking. For western recipes, I use Olive oil and ghee I sometimes use in some of the recipes only if original recipe ask for it. Enjoy!
do you have any videos with either okra/beans/egg plant and potato. I had a beautful curry the other day from a curry shop. But as a poor student I would like to try cooking them myself as I can seldom afford to buy them :) could you point me in the right directionplease. thank you

Aaloo means potato and gobi means cauliflower. sugar is optional but we gujarati tend to add salt to most dishes...feel free to ask agian if I haven't answer your question..
