I would strongly suggest that you don't whisk the eggs. Just beat them lightly until they're homogenous. Make sure that they don't foam up. After adding the hit milk, pass the mixture through a sieve. When cooking, cover each cup with foil. This ensures a very smooth texture.
I have made it 2 times and it was delicious. Just 1 problem. the caramel got stuk at the bottom of the ceramic cups. any idea how this doesn't happen and the caramel gets out at the top of the cream instead? Also: I didn't had lemon for the caramel and I used tangerine instead. It worked perfectly

I mean i don't have those special cups what can use in the oven. I couldn't find anything in the supermarket also.Can i use something else to actually make ready the flan? I was trying a different recipe for the caramel, which called for 2 oz granulated white sugar and 2 tablespoons water (no lemon juice). This took over an hour on the stove top, and it turned into hard gold brown lumps which did not liquify completely. I'm not sure if I did something incorrectly or the recipe was wrong. I will try your way next time. Also, I added a teaspoon of rose water for a Valentine's Day twist!
hmmm... not really sure. I use 1 cup of sugar for 1/4 cup of water. caramel is basically burnt sugar, you should put it on medium heat in the beginning and then lower the heat to be able to control the caramel color. please let me know if it works out this time. good move with the rose water!!!!

you can get them anywhere (supermarket, cooking store, etc.). they are called "ramekins" or ceramic baking dishes.
