We're able to junk trade items off sometimes, and we could for that particular merch. That's why we bought as many items as possible, we could get rid of them somewhat easily for people and give everybody the best profit possible.
With the GE, items that a lot of people buy, raise the price, I.E 200 people buy gold amulets, it raises the price until you can't buy them anymore, the price then continues to rise because the demand is too high for what there is to sell. The price rises to a set price, then everyone sells that item. Making money since the item's price rised.

We're not blind. We can just see that those are the second trade screens, not the first.
We showed the second trade screens to help prove that we were actually BUYING the trades, not just trading for the screenshot.
