The white bags coming off soon after launch are FRCS rain covers. On the ground they are to keep rain accumulation from entering the throat of the thrusters. The covers are designed with flaps or pockets to allow the air to pull them off after launch.
For anyone who cares, the bright flash shooting upwards JUST before booster sep is called FRCS Windows Protect. The FRCS engines fire for a couple seconds to protect the plume from the SRB sep engines from damaging the windows - saves them on maintenance of the windows later on..
