I love enchiladas my mom made this when i was little, she made them of beans or canned tuna oh my childhood these ones look delicious :) you should try enchiladas serranas they're amazing

the center has a very tough gristle running in it, so some fat did get removed.

That looked delish! How long does it take to prepare before you get it in the oven? I want to try this recipe! Mexican food is my FAVORITE and I make it a LOT. I have gotten to making a enchilada cassarole thing now (layers) to speed up the time on making them...LOL I know...I've become a lazy cook in my old age...:-)

love your videos, but the O.G way ro prepare enchiladas is not to bake it, you dip the raw tortillas in the enchi. mix, then fry it in some oil for a bit. definitely unhealthy, but who cares!

hard to go wrong w/ enchiladas -- one of my favorites. those look about perfect. i might try to make some this week w/ swiss cheese as a topping and ground beef. the presentation was excellent (love the lettuce too)

Oh my goodness Michael, it's 8:20 am and you've got me wanting Mexican food for breakfast! LOL. We were just talking about enchiladas last night and making our own sauce. Yummy. You know in over 40 years of cooking, I've only ever made poultry or cheese enchiladas; never beef. No reason, just is. Weird. Your avocado looked good too - that isn't always easy to find in the midwest. Great video!

That cat somehow knows different knife sounds, yes sounds of the knife cutting things.

When I am cutting up chicken (may be the smell also) he then is at my feet.

He loves raw chicken and I give it to him in little bites, sort of scraps and he inhales that raw chicken.
