you dont need to use ghee substitute with normal vegetable oil

@Afquan you take a stik of butter and water boil it let it cool over night then remove the Ghee disk from the water and use it like oil

If I was you, i would have prepared the 'Tadka' first(Indian name of mixure of Tomatos n Onions and other spices)and then I would have put the potatoes n cauliflower.
