Gooey-ness is sometimes due to starch. What you can do is wash your rice until the water becomes CLEAR. This will take a lot of rinsing. After that, drain water from rice. Now, you can add it to the heated butter/oil in a new pan.
actually if you add to much liquids and donot boil it long enuff it will be starchy if you are using Japanese rice you should always rinse it but otherwise for this dish its the amount of liquids that is added that screw it up you should also note the amount of liquid in veggies if you use em like onions of fresh tomatoes etc as part of the moisture within rice dishes
mmm this reminds me of a rice my sisters boyfriends mother use to make. she was from porta rico. ah her rice was amazing. i don't remember what it was called but it was a redish rice with something like pork in it and it had green olives and a taste of lime. mmm :3 this looks really good too... too bad where i live i can't find chili powder or cumin spices.. makes me want to cry :(

The rice is NOT pre-boiled, and yes, it's simmered in chicken broth. You really should go to the chef's blog where you will find the ingredients listed, and each video recipe has a written intro. You are really missing a lot if you watch only from here.
