The more I watch the Iron Chef, the less i know what is the meaning behind the show!
We don't get to taste the food, we rely on what the judges say, but the judges are heavily edited, so all we get is the furious cooking, people eating and talking, and then some voting afterwards.
Here, by just watching this episode, i would ve guest that Appleman won, but he didn't.
I wonder how long they actually had to come up with those dishes. If anyone thinks this show is really live and only had 1 hr to know the secret ingredient and cook those dishes, I'm so sad to burst that tiny bubble you live in.
They do have a list of potential secret ingredients they might have to face on competition day. They can plan out what they want to make beforehand. But they really only have one hour to get it all in the works and this is where it really counts!
@mchan2048 I'm pretty sure they're told the actual secret ingredient in advance. Notice how all the ingredients they need are just there -- and they know where everything is. Also how sous-chefs immediately get their action going without any instructions. Not even a brief huddle before they begin. They're not telepathic, and these are complex recipes, every one. They get to plan very accurately...but yes, one hour for execution
@smutpow To answer your question, they have 15 minutes from when they first see the ingredient behind the scenes when its not being aired. then they show it to them again when its being filmed for us.
@smutpow The chefs are given a list of possible ingredients ahead of time, so before filming starts, they know what they are making. Then, after the ingredient is revealed there's 45 minutes for planning. Then, the part they show, 1 hour to make 1 serving of each dish for the close-ups. Then another 45 minutes to produce 4 more servings for the judges. Even though it's longer than it looks, it's still extremely difficult.
And I'm going to have to make that white trotter ragu now.

Chef Appleman shouldn't win. He's only good in decoration/presentation of the plate.
He uses parts of the pork which is unhealthy, like the liver. And I never knew anyone who eats pork brains. If I were the judge of ICA, i'd reject eating his dish which contains pig brains.
I'm not surprised you don't know anyone who eats pork brains, because it's not exactly a common food staple in American kitchens; I don't know anyone who eats truffles and I'm not about to turn them down if they land on my plate!
Furthermore, ICA isn't about who can make the healthiest dishes. If it was, they wouldn't have used suckling pig as a secret ingredient; All pork products would be strictly banned from the kitchen which clearly isn't the case (thank God!)
Symon is the best almost sounds sarcastic! lol that was funny. I guess American palates aren't ready for Lamb Brains.....thats too bad Appleman killed it. Iron Chefs always get the nod or that little push even when they shouldn't.
Looking at the challengers dishes and the reactions of the judges to both chefs dishes I would have thought the challenger would have taken this. Oh and you can get suckling pig in NYC by the way, Tolache in Times Square its a Mexican joint, really REAAAALLLLY good!!!
First battle I dont agree with I so thought Appleman was gonna win this one.
